1 kg Chicken, cut into 8 pieces
1 Lime
8g Salt
Ground spices:
15g Red Chilies
6g Cayenne Pepper
21g Ginger
15g Aromatic Galangal
35 - 40g Shallots
20g Garlic
21g Turmeric
5g Powder Broth
9g Salt
8g Coriander Powder
10g Chicken Powder
8g Sugar
1 liter Water
Other Seasonings:
21g Greater Galangal
15g Tamarind
In a blender, add red chilies, cayenne pepper, aromatic galangal, shallots, garlic, turmeric and water. Blend till smooth.
In a saucepan, add about 50ml of oil over medium heat, sauté the blended spice until fragrant, add powdered broth, salt, coriander powder, chicken powder, sugar, tamarind, galangal and saute well.
Add chicken and stir well.
Add water and cook until the oils are separated from the sauce.
Remove and set aside to serve.
