Bajigur is a traditional Indonesian hot beverage often sold in pop up roadside cafés of West Java. The warm drink is a sweet combination of coconut milk, palm sugar, coffee, pandan leaves and ginger. With a refreshing hint of spice and heat from the ginger, this soothing drink is a suitable companion for a rainy night in or even when you are feeling under the weather.

Instructions

  1. Make drink

    • In a pot, add in water and coconut milk and bring it to a boil. 
    • Add in pandan leaves, cinnamon stick, salt, instant coffee and ginger.
    • Cook over low heat and stir consistently
    • Once it comes to a boil, remove and serve.
