  • 150 ml water

Bubur ketan hitam, bubur pulut hitam or bubur injun is an Indonesian sweet dessert made from black glutinous rice porridge with coconut milk and palm sugar or cane sugar. It is often described as "black glutinous rice pudding" and is very similar to black rice tong sui made from black rice. . It is often served as dessert or snack, for supper, for tea time, anytime of the day It is sometimes referred to simply as ketan hitam or pulut hitam, meaning "black glutinous rice".

Instructions

  1. Cleanse, soak the black rice

    • Cleanse the black rice and in a mixing bowl, soak in hot water for an hour. Then throw out the water and rinse the black rice


  2. Boil the Black rice and boil the sauce

    • In a small pot, add 150 ml water, sugar, palm sugar, a bit of salt, and pandan leaves, Boil until the water boils. Add in and mix the the black rice, stir until it cooks. Mix well, bring to boil and set aside
    • In a small pot, add 150 ml coconut milk, 150 ml water, 2 pandan leaves, 2 Tbsp cornstarch and 4 Tbsp sugar.
    • Mix well, bring to boil and set aside
    Boil the Black rice and boil the sauce


Plate and Serve!

In a bowl, plate the rice, along with sliced/diced mango on top. Drizzle coconut sauce over the mango and rice,
