400 g fresh or dried white noodles
½ tsp Sichuan peppercorns (grinded)
2 tbsp chilli oil
1 tbsp sesame paste (Tahini paste)
3 tbsp light soy sauce
1½ tbsp sugar
1 tsp dark vinegar
2 tbsp oil
3 tbsp sichuan ya cai
100 g minced pork (marinated with ¼ tsp salt, ½ tsp sugar, ½ cornstarch, ½ sesame oil, ½ tsp Shaoxing wine, ½ light soy sauce)
½ tbsp shaoxing wine
½ tbsp light soy sauce
4 dried chilli (deseeded)
1 scallion (chopped)
Scoop extra spoons of chilli oil around the noodles, and garnish with some scallions.
