3 cups peeled and diced sweet potato
3 cloves minced garlic
1 tbsp ginely grated fresh ginger (about 25 mm piece)
3 tbsp apple cider vinegar
2 cups beef stock (500 ml)
1/4 cup strong coffee
3 tbsp maple syrup
2 tbsp soy sauce (or to taste)
black pepper
