  • meat balls:

    500 g minced meat (fatty parts) 

  • 6 tbsp tapioca flour 

  • 2 tbsp flour  

  • salt and pepper to taste 

  • 1 clove garlic 

  • 1 ice cube

     

  • sambal:

    40 red cayenne peppers 

  • 5 red curly chilis 

  • 4 cloves garlic 

  • 1 tbsp tomato sauce 

  • 1 tbsp chili sauce 

  • salt and pepper to taste 

  • chicken powder to taste (optional) 

  • oil to sauté

Bakso Mercon (Firecracker Meatballs)

Bakso is often sold from the pushcarts in the streets of Indonesia, along with noodles, tofu and other ingredients. Bakso means Meatballs and Mercon means fireworks, meaning I’m going to make very spicy meatballs. Bakso Merco nis actually a recent addition to the meatball family and has exploded as an ASMR trend on youtube too. There are 2 types; dry and wet. I’m going to show you how to make the dry version. You can always reduce the chillies and cayenne peppers if you cannot take the spiciness.

Instructions

  1. Make meatball mixture

    • In a food processor, add minced meat, tapioca flour, flour, garlic, salt, pepper and a nice cube. 
    • Mix it well but do not overmix (so meatballs remain juicy).


  2. Boil meatballs

    • Shape the mixture into balls. You can use a small ice cream scoop or just use your hands. 
    • Boil the balls in water. Once they start to float, take them out and let them cool.

  3. Cook meatballs in sauce

    • For the sambal, blend all the ingredients and sauté until fragrant. Add meatballs and mix well.
