  • 1 kg fresh prawns (cleaned with legs cut off)

  • 2 stalks lemongrass (finely sliced)

  • 1 torch ginger bud (finely sliced)

  • 3 chili padi (sliced)

  • 3 kaffir lime leaves (finely sliced,+3 for garnish)

  • 1½ tbsp oyster sauce

  • 2 tbsp tom yam paste

  • ½ cup canned tomato sauce

  • 1 egg (beaten)

  • 1½ tbsp mayonnaise

  • 3 tbsp chili sauce

  • 2 tbsp white vinegar

  • 3 tbsp cornstarch

  • 1 tsp honey

  • ¼ cup water

  • salt (to taste)

  • oil for deep frying + 1 tbsp oil

  • 1 tsp sugar

Fragrant Crispy Fried Prawns

This dish will be a big hit because let’s face it, who doesn’t enjoy crispy fried prawns in sweet and spicy sauce? This recipe is an amalgamation of ingredients frequently found in Thai cuisine with mayonnaise (yes mayonnaise!), which lends the dish its unique spicy creaminess. Perfect served hot and with a piping hot bowl of rice!

Instructions

  1. Marinade the prawns

    • In a bowl, mix together oyster sauce, egg, cornstarch and a pinch of salt.
    • In a bigger bowl, mix the prawns with the marinadeand set aside for 15 mins.

  2. Deep fry prawns

    • Heat up oil for deep-frying in a pot. Deep fry the marinated prawns until goldenand drain on kitchen paper.

  3. Cook the sauce

    • In a separate pan, heat 1 tbsp oil and sauté sliced lemongrass, sliced ginger bud and sliced chili padi until fragrant.
    • Add tom yam paste, water, honey, chili sauce, sugar, vinegar and tomato sauce.
    • Season with salt and stir well

    | Adjust the level of spice in this dish by adding or removing chili padi

  4. Mix prawns in sauce

    • Add in prawns and mix thoroughly


  5. Stir in mayonnaise and lime leaves

    • Remove from heat and stir in mayonnaise and sliced kaffir lime leaves.


Garnish and Serve!

Serve hot garnish with finely slice kaffir lime leaves.
