  • 6 skewers
  • 5 boneless chicken leg (cut into thick strips) - pork, beef or lamb can be used instead of chicken.

  • 5 cloves garlic (peeled)

  • 2 coriander roots

  • 1 tsp white peppercorn

  • 1 tsp coriander seeds

  • 2 tbsp fish sauce

  • 1 tbsp dark soya sauce

  • 2 tbsp soy sauce

  • 1½ tbsp stevia or Equal (melted in a little hot water)

  • 250 ml coconut milk for brushing

  • 1 tbsp corn flour

  • 10 wooden skewers (soaked in water)

With just four simple steps, you can then imagine yourself standing by the streets of Thailand eating Gai Bing. Trust us, it is that good! Also, you can always use pork, beef, or lamb instead of chicken, as listed in the recipe. Spice it up according to your preferences, make your own Gai Bing.

Instructions

  1. Pound spices

    • In a pestle and mortar, pound the garlic, coriander roots, coriander seeds and peppercorns to a paste.

  2. Marinate chicken

    • Mix the paste with fish sauce, dark soy sauce, soy sauce, stevia and corn flour in a bowl and add the chicken.
    • Mix evenly the marinade and chicken.
    • Cover and leave the chicken to marinate for 1 hour.

  3. Skewer meat

    • Thread about 3 pieces of the marinated chicken onto each skewer and squeeze them tight.


  4. Grill skewers

    • Grill the skewers over medium heat for 10 –15 minutes.  Brush the meat with coconut milk during grilling.  Flip over every 3-4 min.
    • Until meat caramelised and cook through.

Serve with rice and chili sauce.
