Lemongrass Roasted Chicken

Up your game with a good roast chicken dish and we have a secret ingredient that will just bring this dish a notch up. Lemongrass is the answer to cooking a thai/Vietnamese style roast chicken. Instructions

  1. Preheat oven and marinate chicken

    • Preheat the oven to 220°C.
    • Blend lemongrass, coriander root, garlic, black peppercorn, kaffir lime, 2 tbsp oyster sauce, 2 tbsp soy sauce, 1 tbsp vegetable oil, 2 tbsp milk and 1 tbsp palm sugar. Set aside.
    • Lightly score the skin of the chicken, then marinate with the lemongrass paste for at least 1 hour or, for best results, overnight.

    | Scoring the meat makes it easier for the chicken to absorb the marinade. Same goes for duck, beef and other meats!

    Preheat oven and marinate chicken


  2. Roast and serve chicken

    • Roast chicken in the oven for first 30 minutes, covered with foil then 10 minutes without foil or until the skin is golden brown.


Plate and Serve!

Serve hot! Goes well with steamed rice.
