Ingredients

  • Serves 2-3 people
  • mirin:

    120 ml rice vinegar

  • 2 tbsp (30 ml) honey

     

  • teriyaki sauce:

    60 ml soy sauce

  • 60 ml mirin (from above)

  • 40 g brown sugar

  • ¼ tsp grated garlic 

  • 15 g potato starch

  • 30 ml water

     

  • okonoiyaki sauce:

    3 tbsp ketchup

  • 2 tbsp worcestershire sauce

  • 2 tbsp oyster sauce

  • 2 tbsp mirin (from top)

  • 1 tsp honey

Instructions

  1. How To: Make Mirin

    • In a saucepan, add rice vinegar and honey.

    • Put it over low heat and stir until honey is dissolve.

    • Cool and store.

  2. Make Teriyaki Sauce

    • Mix potato starch in water and stir until mixture smoothen.  Set aside.

    • Mix soy sauce, mirin, sugar and garlic in a sauce pan under low heat.  Stir until sugar dissolve.

    • Stir in potato starch mixture slowly and gently to sauce in pan.

    • Once sauce thickens to desired consistency, turn off heat.

    • Cool it and store in containers.

  3. Make Okonomiyaki Sauce

    • In a bowl, add ketchup, Worcestershire sauce, oyster sauce, mirin and honey.

    • Mix them evenly together

    • Sauce is ready to spread on Okonomiyaki pancake
