  • 300 g beef cubes for stew

  • 2 packets of sweet potato noodles 

  • 8 pcs shitake mushroom 

  • 1 yellow onion (medium diced)

  • 4 garlic (minced)

  • 2 cm ginger (sliced thinly)

  • 1 star anise 

  • 6 cloves 

  • 1 tsp crushed chinese peppercorn ash 

  • 4 - 5 tbsp mala paste 

  • 1 pc beef cube 

  • 2 tsp light soy sauce 

  • 3 tsp rice vinegar  

  • salt (to taste)

  • 1 tsp sesame oil 

  • 4 tbsp oil

  • garnish:

    spring onions

Mala Beef Noodles Soup

Steaming hot and spicy, the Mala Beef Noodle Soup is the ultimate warming dish for a cold winter’s night. It is incredibly aromatic, thanks to the liberal use of garlic, ginger and Asiatic herbs such as star anise, cloves and, of course, the Chinese peppercorn. Fair warning though, you might end up perspiring so make sure you have more than a couple of napkins at hand!

Instructions

  1. Blanch beef cubes and fry mala paste

    • Blanch beef with hot water. Drain and set aside. Heat up medium size pot over medium heat. Add cooking oil.
    • Add minced garlic, ginger and onions. Leave to cook till fragrant.
    • Add beef cubes, star anise and black cloves. Stir well.
    • Add mala paste, Chinese peppercorn ash . Stir well.
    Blanch beef cubes and fry mala paste


  2. Cook soup and simmer beef

    • Add water to the beef and stir. Cover pot to let beef cooked. Add beef cube, soy sauce, rice vinegar and season with salt. 
    • Leave to cook further till almost tender.


  3. Add mushrooms and cook till tender

    • Add rice vinegar, sesame oil and mushroom. Stir well. Leave to cook till beef and mushrooms are tender.

  4. Cook sweet potato noodles

    • Cook sweet potato noodles as instructed in the package. 
    • Rinse with cold water and coat it with cooking oil to prevent from sticking.
    • Serve immediately with Mala beef soup.

Garnish with spring onions.
