Ingredients

  • 8 meatballs
  • meatballs:

    300 g minced beef 

  • 1 medium size red onion 

  • 1 ½ tbsp plain breadcrumbs 

  • ¼ cup gelatine 

  • ½ cup water 

  • 2 tsp chicken stock 

  • 2 tsp mala paste 

  • 1 tsp black pepper 

  • 1 tsp chilli powder 

  • ½ tsp szechuan peppercorn 

  • 2 sprigs of spring onions (sliced thinly)

  • soup:

    1 red onion (sliced thinly) 

  • 1 tomato (diced)

  • 4 tbsp mala paste 

  • 2 tsp ginger paste 

  • 2 tsp garlic paste 

  • 1 tsp white pepper powder 

  • 2 tbsp cooking oil

     

  • 4 cups water 

  • salt 

  • 1 tsp sugar

  • garnish:

    sliced chili padi 

  • spring onion 

  • coriander leaf

Bursting Mala Meatballs Soup

Whether it is for guests or an easy weeknight dinner, this dish –juicy meatballs swimming in a wonderful concoction of red onions, fragrant herbs, and peppers -will surely impress. This makes a very filling and satisfying meal on its own or eaten with a bowl of rice to neutralise the heat!

Instructions

  1. Mix gelatine with broth

    • Add water to gelatine and chicken stock. Let to bloom. Set aside.


  2. Mix meatball ingredients

    • In a bowl, add minced beef, mala paste, black pepper, chilli powder, szechuan peppercorn, spring onions.


  3. Make meatballs

    • Place a little bit of oil on your palms and using your fingers to coat your palms. Take a little bit of beef mixture roll into a ball and flatten it on the middle of your palm.
    • Using your fingers scoop a little gelatine mixture and place it into the middle of the beef mixture.
    • Gently roll it in circular motion securing all sides to form a ball. Place onto a tray and repeat process.

  4. Fry meatballs

    • Heat up pan over medium heat. Add cooking oil. Place beef balls and cooked through. Set aside.

  5. Make mala soup base

    • Heat up a medium size pot over medium heat. Add cooking oil.Add onion, garlic and ginger. Stir well.
    • Add water, Mala paste, white pepper and season with salt and sugar.
    • Leave to simmer gently.
    • Add all the cooked meatballs and diced tomato. Leave to a low simmer before turning off heat.
