  • Serves 8 pancakes
  • pancake batter:

    1 ½ cups plain flour 

  • 1 egg 

  • 1 ¼ cups whole milk 

  • 1 ½ tbsp mala stir fry paste 

  • 3 tsp baking powder 

  • 2 tbsp sugar 

  • ½ tsp salt 

  • 4 tbsp unsalted butter 

     

  • crispy fried chicken:
    2 pcs chicken breast (cut into large diced)

  • 1 egg 

  • ½ cup panko 

  • 2 stalks spring onion 

  • 1 tsp black pepper 

  • ½ tsp salt 

  • ½ tsp chilli powder 

  • 1 ½ tsp sesame oil 

  • ¼ cup cooking oil for frying

     

  • garnish:

    mala powder 

  • maple syrup

Mala Pancakes with Crispy Fried Chicken

Pancakes, fluffy with a touch of heat, paired with the crispiest and crunchiest of chicken pieces and drizzled in sweet maple syrup. For those who can take the spice, feel free to douse it with mala powder!

Instructions

  1. Make pancake batter

    • In a large bowl, add all dry ingredients
    • Add egg to the milk and whisk lightly.
    • Pour the milk mixture to the dry ingredients.
    • Whisk well .Add mala paste. 
    • Stir well to mix thoroughly. Set aside


  2. Season chicken

    • Mix panko with salt, black pepper, chilli powder and spring onion.In another bowl, lightly beat egg. 
    • Add sesame oil. Pat dry chicken pieces with paper towel.
    • Dip chicken into egg mixture and coat it thoroughly with panko mixture. Set aside.
    Season chicken


  3. Fry chicken

    • Heat up frying pan over medium heat. Add cooking oil.
    • Once oil is heated, gently place chicken wings.
    • Leave to cook till golden brown.
    • Remove from pan and set aside.

  4. Make pancakes

    • Heat up pan over medium heat.
    • Add 1 tsp butter.
    • Add full spoonful of pancake batter. Leave to form tiny bubbles before flipping over.
    • Remove from pan
    Make pancakes


Plate and Serve!

Serve pancakes with maplesyrup and fried chicken and sprinkle mala powder on it.
