Ingredients

  • Serves 3-4 people
  • 1/2cup popcorn kernels (either mushroom or butterfly kernels)

  • 3 tbsp oil

  • 1 tsp mala oil

  • 2/3 cup butter

  • 2 cups brown sugar

  • 1/2 cup corn syrup

  • 1 tsp sea salt

  • 1/2 tsp baking soda

  • 1 tsp vanilla extract

Mala Salted Caramel Popcorn

Spicy, salty with a taste of slightly burnt sugar, this Mala Salted Caramel Popcorn is so addictive that you will need to set the narcs on it! What more, it is incredibly fun to prepare –an orchestra of corn kernels popping, melting a sinful mix of butter, brown sugar and mala paste in a pot and dousing it all over the over the popcorn. The only thing left to do? Tuck yourself in with a good movie, and enjoy the popcorn!

Instructions

  1. Pop the popcorns

    • Heat 3 tablespoons of oil in a large wok.
    • Add mushroom pop corn kernels and mala oil, mix well and close lid
    • Corn kernels should start popping after a while. Shake the pot once in a while. 
    • When there is no sound of the popping, turn off the heat open the lid
    • Pour into a large bowl to cool. Pop corns should only fill 2/3 the bowl to allow space for mixing.


  2. Making caramel mala sauce

    • In a saucepan, melt butter over medium heat. 
    • Stir in brown sugar, corn syrup, salt and mala paste.
    • Let it boil without stirring for 4 minutes
    • Turn off the heat and stir in vanilla extract and baking soda. You should see intense bubbling action after you add the baking soda.

  3. Coating the pop corn

    • Slowing pour the sauce into the popcorn, mix well.
    • Lightly sprinkle some mala powder and garlic powder, mix well


  4. Crisping the popcorn

    • Evenly spread the popcorn into a baking tray with parchment paper, separate any popcorns that are stuck together.
