Seafood lovers, you are in for a real treat because here is a special dish that you will want to get your claws on –the Mala Soft Shell Crab! For the uninitiated, soft shell crabs are actually regular hard shell crabs, just at a particular stage of growth. You can eat them whole and the meat inside is incredibly sweet, juicy and bursting with pure crab flavour. We recommend frying the marinated soft shell crab gently in the pan, but if you prefer a slightly healthier way, baking works too!

Instructions

  1. Mix egg and mala paste

    • Lightly beat egg with a fork.
    • Add mala paste to the lightly beaten egg. Stir well. Set aside.


  2. Make soft shell crab seasoning

    • In a separate bowl, add panko, crushed Chinese prickly ash peppercorn, black pepper, salt, chilli powder and chopped spring onion. 
    • Prepare soft shell crab by lightly patting it with paper towel.


  3. Season soft shell crab

    • Heat up oil in a pan under medium heat.
    • Dip soft shell crab into the egg mix and immediately coat thoroughly with panko mixture.

  4. Fry soft shell crab

    • Gently place in pan. Fry till golden brown.
    • Remove from pan and place it on a plate lined with paper towel.

Plate and Serve!

Garnish with chopped spring onion and coriander leaf.
