150 g quorn meat free pieces (prepped for cooking)
300 g cooked long grain rice (weighing about 100g uncooked)
1 tbsp oil
1 clove garlic (minced)
2-3 spring onions (sliced)
1 red chilli (deseeded and thinly sliced)
1 tsp cumin
1 tsp coriander powder
50 g frozen peas
1 tbsp light soy sauce
salt and pepper to taste
2 tbsp oil
2 eggs (beaten)
salt and pepper to taste
1 tbsp fresh coriander (chopped for garnish)
Serve the fried rice in a dish topped with slices of omelette and garnish with freshly chopped coriander
