  • 1 hard fruit (sliced)

  • 2 cups cooked rice

  • 1 chicken breast (cut into cubes)

  • ¼ cup coconut milk

  • 1/2 tbsp kerisik

  • 1 cup frozen peas

  • 2 eggs

  • 1 turmeric leaf (sliced thinly)

  • 6-8 tbsp oil

  • some lime wedges

  • salt

  • sugar

Nasi Goreng Ayam Rendang

You can’t go wrong with is one wok meal. Nasi Goreng Rendang Ayam is a family favourite for good reason –fluffy rice is tossed about in high heat with classic Asian spices like galangal, chilli and lemongrass, while soaking up the creaminess and distinct taste of coconut milk. While adding the eggs, turn up the fire as we don’t want the eggs and rice to become a mushy mess. With high temperatures, the scrambled fried bits of egg will coat the rice instead of being absorbed by it. Squeeze a lime over at the end to enhance all that yummy flavors!

Instructions

  1. Prepare rendang paste

    • In a blender, add in all the blended ingredients and blend until smooth
    • In a large wok, add in some oil and stir fry blended items for about 5 –6 minutes until fragrant and slightly caramelised.
    • Next, add in the chicken, along with the coconut milk, kerisik, pinch of salt and sugar.
    • Cook for about 10 minutes until chicken is cooked through and mixture thickens up. 
    • Add in frozen peas and carrots. Stir fry for 1 minute and set the ingredients aside


  2. Prepare nasi goreng

    • Pour in some oil and crack 4 eggs. 
    • Scramble slightly before adding the cooked rice and stir fry for 5 minutes until everything is combined with the rice nice and crispy.
    • Lastly, sprinkle somesliced turmeric leaves and fold mixture together.


Plate and Serve!

Serve with lime wedges for extra freshness.
