Nasi Lemak Burrito

A modern twist to a Malaysian (and Singaporean!) favorite, this Nasi Lemak Burrito is a great way to serve up an otherwise traditional dish for dinner. To retain the essence of the dish, I’ve kept the classic elements of Nasi Lemak in the recipe; fluffy coconut-infused rice, strips of spiced fried chicken, eggs, cucumber slices and sambal ikan bilis are lovingly wrapped in tortilla to create a burrito filled with local flavors. Feel free to substitute the tortilla with chapati or any thin flatbread.

Instructions

  1. Marinate the chicken

    • Shave the cucumber into thin slices with a potato peeler or mandolin.
    • Beat the eggs in a bowl
    • Heat up a pan with about 100ml vegetable oil and fry the beaten eggs.
    • Once the omelet is fried, remove from the heat and slice it into strips.
    • Heat the tortilla wraps on a hot pan to soften them up.
    • On each tortilla, put some lettuce leaves, then add a layer of the sambal ikan bilis, a tablespoon of the Nasi Lemak rice, and a strip of the Ayam Goreng Berempah.

Plate and Serve!

Top it with some of the spicy crumbs from the Ayam Goreng Berempah, some strips of the egg omelet, and some cucumber slices.
