1 - 2 boneless chicken thigh (skin on)
250 g glutinous rice (rinsed & soaked in water overnight)
5 dried shiitake mushrooms (soaked in hot water until softened, soaking water retained)
1½ tbsp light soy sauce
1 tbsp dark soy sauce
2 tsp oyster sauce
1 tbsp Shaoxing wine
1 5-cm piece of ginger (peeled)
3 cloves garlic (peeled & finely chopped)
Top with white pepper and serve.
