  • 180 g plain flour

  • 50 g caster sugar

  • ⅛ tsp nutmeg powder

  • 2 ½ tsp baking powder

  • ¼ tsp salt

  • 100 g unsalted butter (melted)

  • 1 egg

  • 100 ml coconut milk (diluted with 40ml water)

  • 2 very ripe bananas (peeled cut into pieces)

  • 150 g gula melaka (chopped)

  • 1 tbsp cornstarch

  • 500 ml boiling water

  • coconut cream (to serve)

One Dish Gula Melaka Banana Pudding

This gooey dessert comes together and bakes in the same pan for a saucy, sweet pudding that will delight the whole family.

Instructions

  1. Make batter

    • Preheat the oven to 180C.
    • In a 10 x 15cm rectangular baking dish, whisk together the flour, baking powder, nutmeg powder, caster sugar and salt until evenly combined.
    • Add the egg, diluted coconut milk and melted butter and whisk until smooth.
    • Stir in the banana pieces.


  2. Make the topping and bake

    • Top the batter evenly with the chopped gula melaka and cornstarch.
    • Slowly and gently pour the boiling water over the top.
    • Bake for 40-45 minutes, until golden brown on top and the sponge part is fluffy.

Serve warm with extra coconut cream on top!
