Otah Omelette Sandwich

How many ways to eat an otah? Well, here’s one-turn it into a satisfying sandwich. You only need a French loaf, sliced, and into it egg-fried Otah (store-bought is fine) and a fresh handful of veggies to lighten the intensely spiced fish paste.

Instructions

  1. Cook the otah

    • Add 10ml of oil and pan fry the defrosted otah paste, break up into small pieces.

  2. Cooking the omelette

    • Beat 4 eggs with a pinch of salt.
    • Add cooked otah paste to the eggs, mix well.
    • With a clean pan, add 20ml of oil and add the egg and otah mix.
    • Pan fry till golden brown, dish and set aside.

  3. Assemble the sandwich

    • Slice the french loaf lengthwise.
    • Assemble with mayonnaise, lettuce, otah omelette, and sliced tomatoes.

Cut into 3-4" size and serve.
