  • 1 medium-sized milkfish (gutted & chopped into 4 pcs) 

    90g ginger, sliced

    4 cloves garlic, sliced

    1 large red onions, sliced

    10 peppercorns

    150 ml white vinegar

    150 ml water

    30 ml fish sauce

    1 small bitter melon (deseeded and sliced)

    4 bowls of white rice

Paksiw is a style of Filipino cooking where meat or seafood is cooked or simmered in vinegar and garlic. Paksiw na Isda, or Bangus (Milkfish) Stewed in Vinegar, is a quick and easy seafood variation of the dish that can satisfy your sour and salty cravings. No oil is needed when cooking Paksiw na Isda, making this an excellent dish for those who are health conscious. Can’t get your hands on some milkfish? You can substitute it with mahi-mahi or tilapia.

Instructions

  1. Cook the fish

    • In a deep pan, add the milkfish, sliced ginger, garlic, onions and peppercorns.
    • Next, pour 150ml vinegar, 150ml water and 30ml fish sauce. 
    • Cover the pan with a lid and allow it to simmer on medium-high heat for 15 minutes without stirring.
    Cook the fish


  2. Add bittermelon

    • After 15 minutes, add the sliced bittermelon and simmer for another 5 minutes.
    Add bittermelon


Plate and Serve!

Pour it into a serving bowl and serve immediately.
