binagoongan:
250 g pork belly
1 whole white onion
2 cloves garlic (minced)
1 whole eggplant (sliced diagonally)
3 pcs tomato (cut into wedges)
1 pc green finger chili
2 cups water
2 tbsp vinegar
5 tbsp bagoong
¼ tsp black pepper
2 tsp vegetable oil
mango salsa:
1 whole green mango (peeled and cubed)
2 whole tomatoes (cubed)
3 tbsp white vinegar
1 tsp white sugar
Serve with rice and green mango salsa
