  • 720 g cooked white jasmine rice

  • 300 g cubed fresh pumpkin

  • 50 g dried sliced shiitake mushrooms (soaked in hot water until softened)

  • 200 g prawns - (est. 8 pieces) without shells, deveined & diced 

  • 100 g squid (cleaned & diced)

  • 20 g dried shrimp (soaked in hot water until softened)

  • 2 stalk spring onions (finely chopped)

  • 1 pc ginger (approximately 5cm in size, grated)

  • 3 tbsp sesame oil

  • soy sauce

  • white pepper

  • vegetable oil

Pumpkin Seafood Fried Rice

Instructions

  1. Stir-fry seafood

    • Add 1 tbsp of oil to a heated wok and fry prawns for 2 minutes or until they turn opaque. 
    • Add in squid and stir-fry for 1 minute or until opaque. 
    • Dish and set aside.


  2. Fry rice & ingredients

    • In a pan on medium heat, heat up 2 tbsp vegetable oil
    • Fry ginger, dried shrimps, pumpkin cubes, and sliced mushrooms until fragrant.
    • Add rice, 1 tbsp soy sauce and 1⁄2 tsp white pepper. 
    • Stir-fry until well mixed and rice takes on a little bit of colour. 
    • Season to taste with additional soy sauce/salt and white pepper.
    • When rice and all other ingredients are nice and fragrant, add pre-cooked seafood and mix well. 
    • Bring wok off heat and drizzle fried rice with some sesame oil.
    • Mix in spring onions, reserving 1 tsp for garnish.


Plate and Serve!

Garnish fried rice with the remaining spring onion and serve hot
