Scallion Oil Noodles

A humble dish from Shanghai, spring onion oil noodles (aka scallion oil noodles) is simple but delectable. It can be served as breakfast, lunch, dinner, or even as a side dish for parties.

Instructions

  1. Fry scallions

    • Heat up the pan with cooking oil. Add scallions and fry until aromatic and slightly brown. Set aside the scallion oils

  2. Scald noodles

    • Heat up a pot of water until it boils. Cook noodles al dente.
    • Drain noodles and transfer to serving bowl.

Garnish and Serve!

Serve immediately. Garnish with chopped spring onions and some fried shallots
