Slurp Up Tasty Japanese Ramen Mee Pok at Li Yuan Mee Pok

At this noodle stall, a Japanese salaryman-turned-hawker serves up what he calls Japanese Fusion Mee Pok

Japan has its famous ramen, and Singapore has its renowned Bak Chor Mee, which is also affectionately known as ‘mee pok’, the flat yellow noodles at the centre of the dish. Well, put the two dishes together, and you’ve got Li Yuan Mee Pok, a noodle stall opened by a Japanese salaryman-turned-hawker. At Li Yuan, former financial executive Naoji Kurabara serves up what he calls Japanese Fusion Mee Pok.

Unlike traditional Bak Chor Mee, which is a dish of chewy noodles tossed with minced pork in a lard, vinegar and soy sauce concoction, Li Yuan’s Japanese Fusion Mee Pok is made with a tare, a technique borrowed from Japanese ramen. This umami-infused base contains garlic, bonito flakes, and miso or soy sauce, in addition to the classic Bak Chor Mee ingredients.

And to take things a level up from regular Bak Chor Mee, Naoji adds fatty Japanese-style chashu to the normal minced pork topping. You can choose between a dry-tossed version, or a soup version, which resembles ramen and its thick, unctuous broth. Li Yuan even offers a crayfish-topped version for an extra dose of luxury.

Singapore has a deep love for Japanese food, and while ramen gets lots of attention, it’s exciting to see a Japanese chef fall in love with our delicious Bak Chor Mee and create a totally new version of it.
