Japan has its famous ramen, and Singapore has its renowned Bak Chor Mee, which is also affectionately known as ‘mee pok’, the flat yellow noodles at the centre of the dish. Well, put the two dishes together, and you’ve got Li Yuan Mee Pok, a noodle stall opened by a Japanese salaryman-turned-hawker. At Li Yuan, former financial executive Naoji Kurabara serves up what he calls Japanese Fusion Mee Pok.
