Ingredients

  • Serves 2 people
  • 4 - 6 eggs  

  • 2 tbsp olive oil   

  • 1 tsp cumin seeds 

  • 2 onions (peeled and diced)

  • 3 cloves garlic (chopped)

  • 1 tsp salt (to taste)

  • 1 ½ tsp garam masala 

  • 1 tsp ground coriander 

  • ½ tsp ground turmeric

  • ¼ tsp dried chilli powder  

  • 2 cans whole tomatoes

  • 2 bay leaves 

  • 80 ml greek yogurt

  • 1 bunch dill (to garnish)

  • 1 bunch cilantro (to garnish)

  • toasted almonds (to garnish)

Spicy Baked Eggs

Everything you crave for in a heartening meal: savoury, fiery and filling. There is just something about spices and yolk, having them together is absolutely fulfilling and unexpected.

Instructions

  1. Make the sauce

    • Heat pan with oil on medium low heat. 
    • Toss in cumin seeds for 1 minute until fragrant.
    • Stir in onions and cook for 10-12 minutes. 
    • Stir in garlic, garammasala, coriander, turmeric, chilli powder. Stir constantly for 1 minute. 
    • Pour in tomatoes with their juices and add the bay leaves. 
    • Bring to boil and then lower the heat to a simmer. Stir occasionally for 20 minutes. 
    • Add salt to taste.


  2. Add eggs

    • Stir in Greek yogurt into the pan.
    • Crack one egg into a small bowl. Make a well in the sauce and carefully slip the egg into the gap. Repeat this for all the eggs. 
    • Add salt and pepper to taste. 
    • Cover pan with lid and leave to simmer for about 5 minutes. 


Garnish and Serve!

Garnish with cilantro, dill and toasted almonds and ready to serve.
