7 large eggs (3 eggs separated into a bowl)
8 medium prawns (peeled and deveined - 3 pieces reserved)
½ cup black fungus (rehydrated and minced)
40 g bean thread noodles (rehydrated and cut into 1 cm)
30 g goji berries
3 shallots (minced)
4 tbsp coriander (chopped)
1 tsp spring onions (finely minced)
1 red chilli (sliced)
1 tsp chopped peanuts
1 tbsp soy sauce
½ tsp salt
½ tsp white pepper
1 tbsp vegetable oil
2 tbsp water
| Whisking the egg will result in a lovely, airy texture for your steamed egg
Remove egg from steamer. Spoon out the spring onion oil over the steamed eggs. Garnish with red chilli, 1 tsp chopped peanuts and spring onions.
