Steamed Ginger Milk Pudding

Guaranteed to make you fall “love-in-first-sight/smell/taste” is the Ginger Steamed Milk. Made predominantly of egg white and milk custard, and infused with the pungent flavor of ginger, this silky white pudding is the perfect summer dessert, served chilled, after a heavy meal! Fun fact: Ginger is known to be good for blood circulation and digestion.

Instructions

  1. Make milk mixture

    • Heat up the milk, cream, ginger juice and sugar in a saucepanover low heat.  Heat the mixture until its warm to the touch, but not hot, stirring to dissolve the sugar completely.
    • Thoroughly beat the egg whites in a largebowl, and then slowly stir in the milk mixture and the vanilla extract.  Mix everything well.
    • Strain the liquid through a fine mesh strainertwice, and then pour into 3 separate heat proof serving bowls.
    • Cover each serving bowl with foil.


  2. Steam the pudding

    • Prepare a steamer with water and bring it to boil.
    • Place the bowls of milk mixture in the steamer and steam for 13 mins.
    • Turn off the heat and let pudding sit in the steamer for 10 minutes before opening the lid.

Plate and Serve!

Serve chilled or warm with your favourite toppings.
