Ube Macapuno Pandesal

Pandesal or Pan de sal (bread roll) is the most popular bread in the Philippines, and almost everyone grew up eating it. While good on its own, infusing it with other flavors just makes it even more amazing! This is my own iteration on the famous marriage between Ube (purple yam) and Macapuno (soft coconut meat). It’s so easy to make and when you bite into this fluffy bread, all the naturally sweet Macapuno oozes out.

Instructions

  1. Making the dough

    • In a bowl, combine warm milk with 2 tbsp sugar. Let the sugar dissolve. Add the yeast in and leave it for about 8mins till you see foam forming on top
    • In a separate bowl, combine all the dry ingredients: sugar, flour, bread flour, and salt
    • Make a well in the center then pour the yeast mixture, ube flavoring, and oil
    • Mix well and knead the dough until smooth
    • Put the dough in a greased bowl and cover with a cling film and place it in a warm place for it to rise for at least an hour


  2. Fill dough with macapuno

    • Once the dough has risen to double its size, put it on a floured flat surface
    • Punch out the excess air from the dough, and divide into your desired size
    • Flatten individual dough and put the macapuno in the center and seal
    • Place the dough on a baking sheet lined with parchment paper. Lightly cover with cling wrap, and let it rise for 45mins


  3. Bake

    • Pre-heat the oven at 350°F
    • Roll the dough in a bowl of bread crumbs and place in a baking sheet lined with parchment paper
    • Bake for about 20 mins


Plate and Serve!

Remove from oven and serve hot!
