  1. Use previously cooked rice: Previously cooked rice is always better for fried rice dishes because they have a certain texture and dryness that is perfect for frying. Freshly cooked rice is fluffy and moist which can make your Yang Zhou Fried Rice stickier. You can also spread freshly cooked rice on a baking sheet and freeze for 25 minutes to dry out the moisture from the rice if you do not have older rice on hand.
  2. Chop all your ingredients to the same size: Authentic Yang Zhou Fried Rice cooks easily and thoroughly when all the ingredients (scallions, shrimp, egg, chicken and mixed vegetables) are chopped to the same consistency and size. This allows for easier and more even frying - packing more flavor into the rice.
